3 Refreshing Summer Craft Cocktails Perfect for the Beach...Recipes included!

Summer is the perfect time to enjoy refreshing craft cocktails, especially when you’re by the beach.


Here are some delightful options to quench your thirst and keep you cool:


Hibiscus Mojito:

A tangy and floral cocktail that combines hibiscus syrup, mint, zesty lime, and rum. Topped with club soda and garnished with fresh mint and lime, it’s a beautiful and healthy drink.


Mint, rum, soda, lime, ahhh: Cuba’s classic highball makes us think of Vero breezes and sandy beaches. Forget the naysayers; the Mojito will always be the quintessential drink for sunny days.


• 2 oz white rum

• 1 oz freshly squeezed lime juice

• 1 oz hibiscus syrup (recipe below)

• 8 to 10 mint leaves

• Soda water to taste

Measure white rum, lime juice, hibiscus syrup and mint leaves into a tall glass. Muddle, fill glass with ice, then top with soda. Using a bar spoon, stir the drink, pulling the mint leaves throughout the ice cubes. Serves 1.

Hibiscus Syrup

• 4 cups sugar

• 4 cups water

• 1 cup dried hibiscus flowers


Beach Blossom Rum Cocktail:

Sweet, tart, and slightly floral, this cocktail features white rum, coconut, guava, pineapple, citrus, and a touch of orange flower water. The stunning pink color comes from guava syrup, and the cream of coconut adds a smooth texture.


What’s in the Beach Blossom cocktail:

  • 2 oz white rum

  • 1 ½ oz lemon juice

  • ¾ oz cream of coconut

  • ½ oz guava syrup

  • ½ oz pineapple juice

  • 2 dashes orange flower water

Combine all ingredients in a cocktail shaker and fill it 3/4 with ice.

  • Shake until chilled, then strain the cocktail into a rocks glass filled with crushed ice.

  • Garnish with pineapple leaves and an edible flower (if desired).


Elderflower Spanish Gin & Tonics:

A refreshing twist on the classic gin and tonic, this cocktail includes St. George Spirits’ Botanivore gin, high-quality tonic, and garnishes like pink grapefruit, rosemary, and juniper. Perfect for sipping under the sun. Ingredients:

  • 2 oz Botanivore Gin

  • 4–5 oz Fever Tree Elderflower Tonic

  • 2 pink grapefruit slices

  • 10 juniper berries

  • 1 rosemary sprig

Directions:

Chill the drinking glass for 15 minutes. Add ice to the glass. Squeeze one slice of grapefruit into the glass and discard. Add the other grapefruit slice, the juniper berries, and rosemary sprig to the glass. Pour gin into the glass. Add the tonic and stir before drinking.
